HOW TO MAKE ITALIAN VEGETARIAN PARMIGIANA


Vegetarian Italian Parmigiana
Recipe for 4 people

Ingredients:
800 g of aubergines or 600 g if you can find frozen and already grilled ones
150 g mozzarella
200 g parmesan
500 g passata
80 g pesto or basil leaves

Method:

If using fresh aubergines, slice and grill well.In an oven dish, make layers in the following order: passata, aubergines, passata, pesto/basil leaves, mozzarella and parmesan, aubergines, passata, pesto/basil leaves, mozzarella and parmesan… until the ingredients are finished. Bake at 180 CÂș for 30 minutes.

This is one of my favourite recipes ever, so I would definitely recommend it. It's quite healthy, and the less cheese you put in, the healthier it gets!

HOW TO MAKE ITALIAN CIAMBELLA
